Guest guest Posted April 11, 2002 Report Share Posted April 11, 2002 Simply Good Vegetable Soup 2 1/2 cups reduced sodium tomato juice 1 1/2 cups hot water 1 cup chopped onion 2 cups diced carrots 1 1/2 cups diced unpeeled zucchini 3 cups shredded cabbage 2 cups tomatoes (1 16-oz. can) -- chopped & undrained 1 tablespoon Splenda or Sugar Twin 2 teaspoons dried parsley flakes 1/8 teaspoon black pepper Spray a slow cooker container with butter-flavored cooking spray. In prepared container, combine tomato juice and water. Stir in onion, carrots, zucchini, and cabbage. Add undrained tomatoes, Splenda, parsley flakes, and black pepper. Mix well to combine. Cover and cook on LOW for 6 to 8 hours. Mix well before serving.
