STACKED PORTABELLO MUSHROOM PITA

 

1/2 cup Hellmann's or Best Foods Mayonnaise

1/4 cup grated Parmesan cheese

2 Tbsp chopped fresh basil, or 2 tsp dried basil

4 portabello mushroom caps (about 3/4 lb)

2 medium red onions, sliced 1/4 " thick

1 large tomato, thinly sliced Lettuce leaves

4 Thomas' Regular-Size Sahara Pita Breads

 

1.Heat grill to high for direct heat or position

broiler rack 2 " to 4 " from heat source and heat

broiler.

2.In bowl stir together mayonnaise, Parmesan cheese

and basil. Lightly brush some mayonnaise mixture onto

both sides of mushroom caps and onion slices.

3.Grill or broil mushroom caps and onion slices 6-8

minutes, turning once or until tender.

4.Arrange pitas on serving plates. Spread each with

some of the remaining mayonnaise mixture. Top with

lettuce leaves, mushrooms slices, tomato and onion.

Top each with some more mayonnaise mixture.

 

PREP: 10 MINUTES

Makes 4 servings

GRILLING: 8 MINUTES
