Guest guest Posted April 23, 2002 Report Share Posted April 23, 2002 Chinese Vegetables A La FloridaINGREDIENTS:2 c Carrots, cut in 2-inch pieces2 c Celery, cut in 2-inch pieces1 c Broccoli stems, cut in 2-inch pieces1 c Fresh green beans, cut in 2-inch pieces1 Onion (large), sliced1/2 t Salt1-3/4 c Grapefruit juice, divided1 c Broccoli flowerets4 t CornstarchPREPARATION METHODIn large saucepan, combine carrots, celery, broccoli stems, greenbeans, onion, salt and 1 cup grapefruit juice; bring to a boil. Cover; simmer 8 minutes. Add broccoli flowerets. Cover. Cook 5 minutes or until vegetables are crisp-tender. Blend cornstarch with remaining 3/4 cup grapefruit juice; pour over vegetables;bring to a boil, stirring constantly until thickened. Serve at once.
