Guest guest Posted April 23, 2002 Report Share Posted April 23, 2002 Pumpkin Cheese-Swirled PieIngredients:1 unbaked 9-inch (4-cup volume) deep-dish pie shell1 package (3 ounces) cream cheese, softened1/2 cup light corn syrup, divided1/2 teaspoon vanilla extract (optional)1 cup LIBBY’S® 100% Pure Pumpkin1/2 cup NESTLÉ® CARNATION® Evaporated Milk2 large eggs, lightly beaten1/4 cup granulated sugar2 teaspoons pumpkin pie spice1/4 teaspoon salt (optional)Directions:PREHEAT oven to 325° F.BEAT cream cheese in small mixer bowl until light and fluffy. Graduallyadd 1/4 cup corn syrup and vanilla extract; beat until smooth.COMBINE pumpkin, evaporated milk, eggs, remaining corn syrup, sugar,pumpkin pie spice and salt in medium bowl. Pour into pie shell. Dropcream cheese mixture by rounded tablespoon onto pumpkin filling. Swirlmixture with spoon, pulling pumpkin mixture up to surface.BAKE for 50 to 60 minutes or until knife inserted near center comes outclean. Cool completely on wire rack.
