TUSCAN TOMATO RICE SALAD

 

1 cup onions, sliced

1/3 cup balsamic vinegar

2 1/2 cups roma tomatoes, chopped

1/2 cup walnut pieces, toasted

2 1/2 cups cooked brown rice

1 tsp crushed dried rosemary

2 T lemon juice

1 T olive oil

1 tsp onion powder

1/4 tsp sea salt

to taste--freshly cracked black pepper

 

Heat up a small skillet on medium heat and saute

onions in balsamic vinegar until limp. Toss all

ingredients together in a large bowl and refrigerate

several hours or preferably overnight for flavors to

meld.

Serves 6
