The flavor of roasted red bell peppers became a sensation here starting in the mid-1980s. If you don't roast your own (which of course is the preferred way), you can buy them bottled, stored in water, and ready to use. In most groceries and specialty stores, the peppers come from Italy or even California. However, a little known secret is that the Spaniards have been roasting peppers for at leastas long as the Italians. The sweetest and most piquant peppers are from Navarra in the Spanish Pyrenees, and they are called Piquillo Peppers. Taste the difference!
