Guest guest Posted May 13, 2002 Report Share Posted May 13, 2002 Greek Veggie Salad with Fava Beans 1 lb. new potatoes, diced 1/2 lb. cauliflower florets 1 red bell pepper, seeded and chopped 1 green bell pepper, seeded and chopped 1-1/2 cups canned fava beans, drained 1 cup cherry tomatoes, halved and seeded 1 cucumber, peeled and chopped 1/2 lb. mushrooms, sliced 1/2 red onion, chopped 1/2 cup black olives 2 Tbs. fresh dill, chopped 1/4 cup fresh Italian parsley, chopped 1/4 lb. feta cheese* (optional), crumbled 1/4 cup olive oil 2 Tbs. balsamic vinegar Place potatoes in a steamer basket over boiling water. Cover pan and steam about 3 minutes. Add cauliflower and steam another 3-4 minutes, or until just tender. Rinse under cold running water. Drain well and chill. Combine next 11 ingredients in a bowl. Add cauliflower and potatoes. Combine oil and vinegar in a jar with a tight-fitting lid. Shake vigorously and pour over salad. Serve chilled. ===== Language is an expression of thought.
