Guest guest Posted May 20, 2002 Report Share Posted May 20, 2002 Holiday Green Bean Salad 8 Servings 2 lbs fresh green beans 2 lbs red bell peppers, sliced into strips 1/2 cup sugar 1/2 teaspoon dry mustard 1 teaspoon salt 1/2 cup champagne vinegar 1 teaspoon grated onion 1 cup vegetable oil 1 1/2 tablespoons poppy seeds Wash green beans and trim ends. Blanch green beans in boiling salted water for 30 seconds; Drain immediately and cover with cold water. Drain cooled beans and place in large bowl. Add red pepper strips. Combine remaining ingredients except oil and poppy seeds in small bowl. Gradually add oil, beating until mixture thickens. Stir in poppy seeds. Spoon over green beans and red pepper.
