Guest guest Posted May 20, 2002 Report Share Posted May 20, 2002 Strawberry Mousse 8 kid-size Servings—Dairy-free 1/2 cup apple cider or juice 1 Tbs. agar-agar flakes 12.3-oz. pkg. soft silken tofu 3 cups hulled strawberries 3 Tbs. honey 1 tsp. vanilla extract In small saucepan, bring cider to a simmer over low heat. Add agar-agar; stir until dissolved, about 5 minutes. In food processor, combine cider mixture, tofu, strawberries, honey and vanilla. Process until almost smooth. Pour into dessert dishes.
