Guest guest Posted May 20, 2002 Report Share Posted May 20, 2002 Soy-Good Burgers 1 cup firm tofu, drained and crumbled 1 cup lentils, cooked and mashed 1/2 cup dry-roasted soybeans, ground 1/4 cup grated onion 1 Tbsp. soy flour 1/4 cup fresh parsley 1 tsp. tamari (wheat free) 1 tsp. Dijon mustard 1/2 tsp. salt 1 cup dry bread crumbs (gluten free if necessary) 2 Tbsp. oil In a large bowl, combine all the ingredients except the bread crumbs and oil. Mix the ingredients in a bowl until thoroughly combined. If too moist, add 1/4 cup of the bread crumbs. Shape the mixture into six patties. Coat with the bread crumbs. Heat oil in a skillet and cook patties until browned, about 5 minutes per side. Serves: 6 Calories: 260 Kc Fat: 11 grams Fiber: 5 grams ***Substitutions for bread crumbs in this recipe can be: cooked millet, cooked quinoa, or quinoa flakes.
