Guest guest Posted May 20, 2002 Report Share Posted May 20, 2002 Fiesta Bake 1 Tbsp. oil 1/2 cup green onions, chopped 2 cups rehydrated textured SOY protein granules (read ingredients if gluten-free; some have caramel colorings) 1 tsp. chili powder 2 cups prepared salsa 2 cups firm silken tofu, drained 1 - 4 oz. can diced green chilies 2 Tbsp. fresh lime juice 1/2 tsp. salt 1 cup crumbled corn chips 1/2 cup grated soy cheese (or homemade " melty cheese " ) Heat the oil in a medium skillet over medium heat. Add the green onions and cook 2 minutes. Add the soy granules and chili powder. Cook for 1 minute and set aside. Lightly oil a 2-quart baking dish or coat it with nonstick cooking spray. Spread half of the salsa on the bottom of the dish. Cover the salsa layer with the soy protein mixture, and set aside. In a small bowl, combine the tofu with the chilies, lime juice, and salt. Whisk until smooth. Pour the tofu mixture over the top layer of the casserole. Top the tofu layer with the remaining salsa. The casserole can be made ahead to this point and refrigerated. When ready to bake, bring it to room temperature, cover, and bake in a 350 degree oven for 20 minutes. Remove the cover and top with corn chips. Add soy cheese (or melty cheese --- recipe in archives). Bake 10 minutes longer.
