Guest guest Posted May 20, 2002 Report Share Posted May 20, 2002 Cajun Potato Wedges Vegetable oil 1 - 2 Tbsp. Cajun spice mix 4 medium potatoes Preheat the oven to 375 degrees. Pour 1/2 inch of oil into a baking dish and place in the oven until hot (about 5 minutes). Cut the potatoes into wedge shapes or chunks. Roll the wedges in the Cajun spice mix until well coated. Add the potatoes to the hot oil and toss to coat. Bake for 20 - 25 minutes or until golden brown, turning occasionally. Drain on paper towels. Serve immediately with ready-made tomato salsa.
