BlanchingRecipes sometimes call for a technique called blanching (or parboiling).

The process calls for the item to be quickly cooked (usually in boiling water) for a brief period.

The food is often "shocked" afterwards in cold water to stop the cooking.

This method is often used in preparing fresh vegetables for freezing.
