Guest guest Posted May 23, 2002 Report Share Posted May 23, 2002 Vegan Cottage Cheese Loaf 1 Tbsp. flax seed 3/4 cup water 2 cups tofu cottage cheese (recipe follows on next post) 3/4 package Lipton onion soup mix 1/2 cup bread crumbs or cooked millet 1/2 cup pecan meal 1 Tbsp. oil (optional) 1/2 cup soy milk Put water in a pan with the flax seed. Bring to a boil and boil for 5 - 6 minutes, until it gets an egg-like consistency (egg whites). Strain the flax seed out of the water mixture and set aside to cool. Mix cooled flax gel and all other ingredients thoroughly. Cover casserole while baking. Bake in a pan of hot water at 350 degrees for 20 minutes. Reduce temperature to 300 degrees for 1 hour. Take cover off and remove pan from the pan of water. Bake for an additional 15 - 20 minutes. Test with a knife until it comes out clean. remove. Serve with vegan brown gravy. Delicious with a vegetable medley and salad. Note: You can eat the flax seed that you strain out. It tastes surprisingly good. It has a kind of nutty flavor. It is very nutritious as it has Omega 3 in it; a highly necessary brain food. Language is an expression of thought.
