Zucchini squash will add lots of color to the mixture. Enjoy!Ingredients:3 Small zucchini squash6 Medium potatoes1 Small onion finely chopped3 Ripe Tomatoes choppedDash all-purpose seasoning1 8 oz bottle reduced fat Italian Salad DressingPreparation:Boil squash until barely tender. Scrub potatoes boil whole until almost done. Cool Squash and Potatoes and peel both. Quarter the Squash long ways and slice about 1/4 inch thick. Cube potatoes as for Potato salad.Put vegetables in serving bowl add seasoning and salad dressing and toss.This is best served chilled.
