Guest guest Posted June 5, 2002 Report Share Posted June 5, 2002 Veggie Stew______________________________Ingredients:3 tablespoons vegetable oilSalt to taste Four large tomatoes2 large onions2 teaspoons of ground red pepper2 large sweet green pepper1 small bunch of carrots1 cup of French beans2 tablespoons of tomato pureePreparation:Wash vegetables with water and some salt to taste. Cut carrots into cubes, slice onions in round shape, cut sweet green pepper into two and remove seeds. Then cut green pepper into small cube. Peel tomatoes and remove seeds, blend the skin and seeds together in juice. Then slice the tomatoes into very thin shreds.Boil French beans for just 5 minutes. Drain water out. Then cut French beans into small shapes.Put 2 tablespoons of vegetable oil in a medium hot saucepan. When hot add onions, carrots, to the oil. Let it simmer, and then add French beans, together with tomato puree and juice. After 3 minutes add slice tomatoes and the green. Let them simmer for a while; add salt After a while check the thickness and add some water, let it boil for 5 minutes. Remove from heat.It can be served hot with crackers.
