Guest guest Posted June 5, 2002 Report Share Posted June 5, 2002 Roasted Vegetable Pizzas Vegetables: 1 small red bell pepper, seeded, cut into strips 1 small yellow bell pepper, seeded, cut into strips 3 small zucchini, cut into thin slices 1 small red onion thinly sliced Vinaigrette: 1 tablespoonful oil 1 tablespoonful red wine vinegar (though sometimes I use balsamic salad dressing) 1 teaspoonful dried Italian seasoning A few sprinkles of crushed red pepper Pizzas: 2 (8oz.) pkgs. prebaked Italian bread shells (Boboli, small rounds) 1/2 cup shredded mozzarella cheese ( I usually get the Sargento Italian mix ) Heat oven to 450 degrees F. In large bowl mix all veggies together. In Small bowl combine vinaigrette ingredients. Pour over vegetables; toss gently to coat. Place in an ungreased 15x10x1 inch baking pan. Bake at 450 degrees for 10 minutes. Meanwhile, place bread shells on ungreased cookie sheet. Stir veggies; spoon Onto shells and bake for another 4-6 minutes or until veggies are tender and bread. Shells are hot. Sprinkle cheese over veggies and bake an additional 2-3 minutes or until cheese is melted. ===== Language is an expression of thought.
