Curried Vegetable Bake______________________________Ingredients:1 Zucchini thickly sliced 1 Carrot sliced or coarsely grated1 Large onion sliced1 Head of broccoli or cauliflower1 Teaspoon of virgin olive oil and 1 tsp butter1 Can of light coconut cream 1 Tablespoon curry powder (your preference)Preparation:

Preheat oven 350Heat oil and butter in large non-stick frying pan or skillet, sauté onions until just tender, add zucchini and other vegetables and sauté until just golden brown.Remove from frying pan and place in a large baking dish. Place 1 tablespoon curry powder in frying pan and stir until all liquid absorbed and it lets oil go. Add coconut cream and mix well. Pour this mixture through the vegetables in baking dish and bake for 30-45 minutes.Serve immediately with any entree, or eat as main course on its own with a tossed salad.
