Guest guest Posted June 6, 2002 Report Share Posted June 6, 2002 Ratatouille Skewers On The GrillMarinade:1/2 cup White wine1/4 cup Olive oil1 teaspoon Garlic, minced1 Tablespoon Basil, fresh, chopped1 medium Green bell pepper, seeded and large diced1 medium Onion, large diced2 cups Eggplant, peeled and large diced2 cups Zucchini, large diced2 medium Tomatoes, large dicedPrepare the marinade. Set aside. Arrange the vegetables on skewers. Place the skewers in the marinade. Allow marinating for 30 minutes, turning often. Place on the grill, away from the hottest part. Cook, turning often and avoiding "flame ups," until just tender.
