Hi Stephanie:

Welcome to this site and I am glad that you really enjoy some of the recipes. I hope the site is a blessing and helpful to you in your transition and attempt to become vegetarian. To help you in your transition ...I reccommend on your next trip to the grocery store...substitute the following. Instead of buying white rice and plain old white bread. Buy Brown Rice, Wheat bread and start eliminating plain old white flour out of our diet. Also start purchasing frozen vegetables and stop buying canned goods. Once you are able to do frozen vegetables then go towards fresh produce. Do things in stages and take your time and experiment. Use Vegetable Stocks and I will send a note later of various types of seasonings you can use. In place od meat start with some of your heavier vegetables like Portabella mushrooms are great or Eggplant. Try not to use so many potatoes because you don't want to always have a heavy meal. Experiment with various vegetables and look in try using Tofu ....but we can talk more about the ways to use Tofu later...I think initially that is a big jump. Let me know what kind of assistance I can give and I will help in whatever way you can. I can find out if they have cooking classes in your area and let you know.
