Black Bean Soup

 

1 cup onions, chopped

1 clove garlic, minced

1 T. olive oil

1 15-ounce can black beans

1 14-ounce can stewed tomatoes

2 cups vegetarian chicken broth

1/2 cup mild picante sauce

1/4 t. ground cumin

2 T. fresh lime juice

chopped fresh cilantro

Sauté onion and garlic in oil. Add remaining

ingredients (except cilantro). Simmer at least 30

minutes, and serve in bowls. Sprinkle chopped cilantro

on top of each bowl for garnish. Serves: 6. Calories

per serving: 150; protein: 8 grams; carbohydrate: 22

grams; fat: 3 grams; cholesterol: 0 milligrams;

sodium: 605 milligrams.
