Guest guest Posted June 29, 2002 Report Share Posted June 29, 2002 Linguine with Red Pepper SauceCooking spray1-teaspoon olive oil1 1/2 cups chopped sweet red pepper1 clove garlic, crushed2 tablespoons chopped fresh basil2 tablespoons balsamic vinegar1/8-teaspoon salt1/8-teaspoon black pepper6 ounces linguine, uncookedFresh basil sprigs (optional)Coat a nonstick skillet with cooking spray; add oil. Place over mediumheat until hot. Add sweet red pepper and garlic; cook, uncovered, 30minutes, stirring occasionally. Set aside, and cool slightly. Placepepper mixture in container of an electric blender or food processor; addchopped basil and next 3 ingredients. Cover and process until smooth,stopping once to scrape down sides. Cook pasta according to packagedirections, omitting salt and fat. To serve, top pasta with pepper sauce.Garnish with basil sprigs, if desired.
