Guest guest Posted July 2, 2002 Report Share Posted July 2, 2002 POTATO SALAD 1 pound white potatoes, cleaned with skin on 1 teaspoon salt 1/2 teaspoon black pepper 1 onion, finely chopped 2 celery stalk, finely chopped 3 hard boiled eggs, chopped 1 cup mayonnaise 1/2 cup salad dressing 2 tablespoons prepared mustard 1 tablespoon dill pickle juice 1. Boil potatoes and cook about 35 minutes until tender. 2. Discard the water. Peel the skin and discard. 3. Place the potatoes in a mixing bowl and let cool completely. Dice the potatoes and add the salt , black pepper, onion, celery and eggs. 4. Add the mayonnaise, salad dressing, mustard and dill pickle juice. Toss lightly.
