Guest guest Posted July 2, 2002 Report Share Posted July 2, 2002 Plantain 2 cups of cooking oil 2 tablespoons of water 1 teaspoon of ground ginger 1/2 teaspoon of salt 1/2 teaspoon of cayenne pepper 6 large un-ripened plantains, peeled, sliced to 1/2 inch thick In a deep fryer or a skillet, cover the plantain slices completely, heat the oil until it is hot but not smoking. In a small bowl, combine the water, ginger, salt an cayenne pepper. Drop the plantain slices into the bowl one by one, coating each piece evenly. Deep fry the plantain slices until golden brown.
