Guest guest Posted July 2, 2002 Report Share Posted July 2, 2002 Sweet Pickled Peaches 5 pounds of firm ripe peaches 1 1/2 teaspoons of whole cloves 3 cups of vinegar 7 cups of brown sugar 3 - 2 inch pieces stick cinnamon, broken 1 teaspoon of whole allspice Dip the peaches into boiling water then into cold water, and remove the skins. Stick 2 whole cloves into each peach. Mix the vinegar, brown sugar, stick cinnamon, and whole allspice in a large saucepan and boil for 10 minutes. Drop the peaches a few at a time into the boiling syrup and cook until tender. Fill hot sterilized jars with whole cooked peaches. Pour the hot syrup over the peaches, covering them well.
