Gazpacho

Prep Time: 40 minutes

 

Ingredients

 

2-1/2 cups tomato or vegetable juice

1 cup peeled, seeded and finely chopped fresh

tomatoes

1/2 cup finely chopped celery

1/2 cup finely chopped cucumber

1/2 cup finely chopped green bell pepper

1/2 cup finely chopped green onion

3 tablespoons white wine vinegar

2 tablespoons olive oil

1 large clove garlic, minced

2 teaspoons finely chopped fresh flat-leaf parsley

1-1/2 teaspoons salt

1/2 teaspoon Worcestershire sauce

1/2 teaspoon freshly ground pepper

 

Directions:

 

1. Combine all ingredients in large glass bowl. Cover

and refrigerate overnight. Serve cold. Makes 5

servings (5 cups).
