Guest guest Posted July 26, 2002 Report Share Posted July 26, 2002 Corn and Green Bean Salad Ingredients 8 ears corn, shucked and cooked (4 cups) Salt 3 tablespoons cider vinegar 1 teaspoon salt 1/2 teaspoon freshly ground black pepper 3 tablespoons olive oil 1/3 cup minced red onion 2 tablespoons chopped fresh parsley 1 pound green beans, trimmed and cut into 1/4-inch pieces Directions: 1. Cut kernels from cobs. Meanwhile, cook beans in medium saucepan of boiling salted water 3 to 5 minutes or until crisp-tender. Drain and rinse under cold water. Pat dry on paper towels. 2. Whisk vinegar with 1 teaspoon salt and pepper in large bowl; whisk in olive oil. Add corn, green beans, onion and parsley and toss to coat. Makes 6-1/2 cups.
