Tip of the Day: Fruity Tips:* For juicier citrus fruits, take from the refrigerator and microwaveat 100 percent power, allowing 45 seconds for one fruit, 60 secondsfor two, and 1-1/2 to 2 minutes for four.* Nothing preserves a fruit's natural nutrients, shape and color likemicro-poaching. For perfect poached peaches, combine 2 tablespoonspeach or other fruit-flavored liqueur and 1 teaspoon each freshlysqueezed lemon juice and vanilla in a flat, microwave-proof 2-quartcasserole. Arrange 4 halved and pitted ripe peaches skin-side down incasserole, cover with lid or vented plastic food wrap and microwave at100 percent power 2 minutes. Turn peaches over, re-cover and cook 1 to3 minutes at 100 percent power until tender. Let stand 3 minutes,uncovered. Slip the skins off and serve warm or chilled with thecasserole juices.* To soften bananas for banana bread and muffins, pierce unpeeledbananas once or twice and microwave, uncovered, at 100 percent powerfor 1 minute, turning over at half time.
