Ingredients 2 1/2 cups dried white beans (navy or pea beans) 2 cups nonfat barbecue sauce 1 cup catsup 1/2 cup water 2 tablespoons maple syrup 2 tablespoons chopped) 1 tablespoon prepared yellow mustard 1 tablespoon molasses 2 - pieces vegetarian Canadian bacon or smoky tempeh strips, diced Preparation - Estimated cooking time: Over 60 minutes - 1 Soak beans overnight in 6 cups of water. The next day, drain the water and place beans in large saucepan with water to cover. Bring water to a boil, turn down to a simmer. 2 Cook until beans are just tender, about 1 1/2 hours. Drain. Beans can be prepared up to this point 24 hours ahead. 3 Preheat oven to 350 degrees . 4 Place remaining ingredients except bacon in a food processor fitted with a metal blade and process until smooth. Scrape mixture into bowl with beans and stir until beans are thoroughly coated. Stir in diced bacon. 5 Transfer beans to a heavy casserole dish. Cover with foil. Bake in preheated oven until beans are soft, about 2 1/2 to 3 hours, stirring every 30 minutes. If mixture becomes too dry during the baking, stir in a little water.
