It can still have manyuses after it begins to harden. Cut the bread into small cubes,season, and toss with butter (or olive oil) to make croutons. Slightlyhard French bread makes the best bread pudding. Or grind slices in thefood processor to make breadcrumbs. Add chunks to peasant-style soupsthat call for bread as a thickener.
