Serve with a tall stack of warmed corn tortillas and your favorite salsa; Miavita low-fat brownies or other sensible portion of a chocolate indulgence for dessert. Ingredients - - Cilantro leaves, for garnish - - Lime wedges, for garnish 3 cups low-sodium chicken broth 1 - can (15 oz.) hominy, drained and rinsed 1 - can (10 oz.) tomatoes with green chilies, such as Ro-Tel, drained 1 cup cooked shredded chicken or turkey meat Preparation - Estimated cooking time: under 30 minutes - 1 Heat chicken broth in a large saucepan over medium heat. Add hominy and tomatoes. Bring to a simmer. 2 Add chicken and cook to heat through. 3 Spoon into bowls and float several cilantro leaves on the top. Serve with lime wedges alongside.
