Guest guest Posted August 1, 2002 Report Share Posted August 1, 2002 Fresh Cabbage and Tomato Salad ªYour children will love vegetables made this way. 1 small head cabbage, sliced thinly 2 medium tomatoes, cut in cubes 1 cup sliced radishes 1/4 teaspoon salt 2 teaspoons olive oil 2 tablespoons rice vinegar (or lemon juice) 1/2 teaspoon black pepper 1/2 teaspoon red pepper 2 tablespoons fresh cilantro, chopped 1. In a large bowl, mix together the cabbage, tomatoes, and radishes. 2. In another bowl, mix together the rest of the ingredients and pour over the vegetables. Yield: 8 servings Serving size: 1 cup Each serving provides: Calories: 41 Total fat: 1 g Saturated fat: Less than 1 g Cholesterol: 0 mg Sodium: 88 mg Calcium: 49 mg Iron: 1 mg ===== Language is an expression of thought.
