Cucumber Relish

Prep Time: 10 minutes

 

 

Ingredients

 

2 medium cucumbers, peeled, seeded and cut in half

lengthwise, then cut crosswise into 1/4-inch-thick

slices

1/4 cup rice-wine vinegar

2 tablespoons thinly sliced fresh basil

2 teaspoons sugar

1 teaspoon kosher salt

1 teaspoon grated lime peel

1 teaspoon grated fresh ginger

1/4 to 1/2 teaspoon red pepper flakes

 

Directions:

 

Stir together all ingredients in a medium bowl until

well combined. Let stand 15 minutes. Serve with

slotted spoon. Makes 2-1/2 cups (five 1/2-cup

servings).
