Plum Tomato-Feta Pasta

 

 

Ingredients

 

1 pound dried radiatore or corkscrew pasta

3 cups finely diced plum tomatoes

3 tablespoons olive oil

1/3 cup chopped fresh parsley

1/2 teaspoon salt

1/2 teaspoon freshly ground black pepper

8 ounces feta cheese, crumbled

1/2 cup chopped red onion

 

Directions:

 

1. Start to cook radiatore according to package

directions.

2. Meanwhile, combine tomatoes, onion, parsley, oil,

salt and pepper in large bowl.

3. Drain pasta; add to tomato mixture with feta and

toss. Makes 6 servings.

cholesterol: 34mg , sodium: 620mg , carbohydrate: 64g
