Guest guest Posted August 5, 2002 Report Share Posted August 5, 2002 Coconut Black BeansServings: 6Total Time: 75 min.Preparation Time: 15 min.Ingredients:2 tablespoons olive oil1/2 red onion - diced fine2 cloves garlic - minced60 ounces canned black beans - drained1/4 cup cilantro - minced1 medium jalapeno chile pepper - seeded and chopped1/2 teaspoon paprika1/2 teaspoon salt1/2 teaspoon black pepper15 ounces coconut milk1/2 cup honeyInstructions:Heat oil in skillet on medium heat. Saute onions and garlic for 10 minutes. Add remaining ingredients and continue to cook until most liquid is absorbed (about 1 hour).
