Apricot Rice PilafServings: 6Total Time: 70 min.Preparation Time: 25 min.Ingredients:1/4 cup olive oil1 1/2 cups brown rice1/2 cup dried apricots - slivered1/2 cinnamon stick8 cloves4 black peppercorns1/4 teaspoon cardamom3 cups water2 medium onion - sliced1/3 cup raisins1/2 cup pine nutsInstructions:Heat half the oil in a medium saucepan. Add the rice and saute for 5 minutes, stirring gently.Add the apricots, cinnamon stick, cloves, peppercorns, cardamom, salt and pepper (to taste), and the water. Bring to a boil, then cover tightly and leave to simmer for 45 minutes. Turn off the the heat and leave covered.In a medium frying pan, heat the remaining oil over medium heat. Fry the onions until soft and slightly browned (10 minutes).
