Guest guest Posted August 9, 2002 Report Share Posted August 9, 2002 Not So Fattening Cheesecake(Yield: 12 servings)2 envelopes unflavored gelatin1 3/4 teaspoons Sweet 'N Low® (7 packets)4 eggs, separated1 cup skim milk2 1/2 cups creamed cottage cheese1 1/2 teaspoons vanilla extract1 teaspoon almond extract1/3 teaspoon saltGraham cracker crust* (optional)In medium saucepan, mix gelatin with Sweet'N Low; blend in egg yolks beaten with milk. Let stand 1 minute. Stir over low heat until gelatin is completely dissolved, about 5 minutes. Pour into large bowl. With electric mixer, add remaining ingredients, one at a time, beating well after each addition. Chill, stirring occasionally, until mixture mounds slightly when dropped from spoon. In large bowl, beat egg whites until stiff. Fold into gelatin mixture. Turn into 9-inch spring-form pan or prepared crust; chill until firm. Garnish, if desired, with sliced fresh fruit.*Graham cracker crust: In small bowl, combine 3/4 cup graham cracker crumbs with 1 tablespoon melted butter or margarine; press into 9-inch pie pan and chill.
