Guest guest Posted August 14, 2002 Report Share Posted August 14, 2002 Tarragon Coleslaw Salad Prep Time: 30 minutes Ingredients 1/3 cup fresh orange juice 1/4 cup white balsamic vinegar (or white-wine vinegar with 1-1/2 teaspoons sugar) 3 tablespoons olive oil 2 tablespoons chopped fresh tarragon 2 teaspoons salt 1 teaspoon sugar 1/2 teaspoon freshly ground pepper 1 head (3 lbs.) green cabbage, thinly sliced 2 cups shredded carrots Directions: 1. Whisk together orange juice, vinegar, oil, tarragon, salt, sugar and pepper in large bowl. Add cabbage and carrots; toss to combine. Serve imediately or chill up to 4 hours. Makes 20 servings.
