Guest guest Posted August 16, 2002 Report Share Posted August 16, 2002 Summerwhite Peach Ice CreamPrep Time: Longer >20 min.Recipe Type(s):DessertINGREDIENTS:7 large ripe Summerwhite California peaches, finely chopped1-1/2 c sugar3 T lime juice2 c half-and-half4 egg yolks2 c whipping cream1 t almond extractPREPARATION METHODCombine peaches with sugar and lime juice. Refrigerate for 1-1/2to 2 hours, stirring once or twice to dissolve sugar and bring outpeach juices. Heat half-and-half with egg yolks in saucepan overmedium heat, stirring often with wire whisk until thick and nearlyboiling. Chill. Combine half the peaches, half the chilledhalf-and-half mixture, half the cream and all of the almond extractin a blender. Process until blended. Repeat with the remainingpeaches, chilled half-and-half mixture and cream. Turn into thecannister of a 4-quart ice cream maker. Refrigerate until ready tochurn.
