Guest guest Posted August 18, 2002 Report Share Posted August 18, 2002 Cheesy Spinach Mashed PotatoesServings: 6Total Time: 45 min.Preparation Time: 20 min.Ingredients:vegetable cooking spray24 ounces fresh spinach4 pounds potatoes - peeled and chopped1/2 cup butter1 1/4 cups milk - warmed3 cups Swiss cheesesalt and pepper - to tasteInstructions:In a large skillet coated with cooking spray, cook spinach (in batches if necessary) over medium high heat until it wilts, but retains a fresh green color. Set aside.Cook potatoes in a large pot of boiling water until tender, about 25 minutes. Drain well. Return to pot and mash well. Add butter and milk gradually. Stir until smooth. Add Swiss cheese and spinach, stirring until cheese melts. Season with salt and pepper.
