French Toast with Strawberry Salsa

 

Prep Time | 15 min.

Cook Time | 15 min.

 

 

 

Ingredients

 

 

 

2 cup(s) strawberries, chopped

14 oz canned pineapple, water-packed, drained (use

chunks or tidbits)

1 medium garlic clove(s), chopped

2 tbsp cilantro, fresh, chopped

1 tbsp fresh lime juice

1 tsp sugar

1 serving(s) cooking spray, or enough to coat skillet

16 oz fat-free egg substitute

1/2 cup(s) fat-free milk

2 tbsp ground cinnamon

16 slice(s) reduced-calorie bread, preferably whole

grain

 

 

 

Instructions

 

 

 

Combine strawberries, pineapple, garlic, cilantro,

lime juice and sugar in a medium-size bowl; set aside

until ready to use.

 

 

Coat a large skillet with cooking spray and heat over

medium-heat.

 

 

Combine egg substitute, milk and cinnamon in a large

bowl. Dip bread into egg mixture, turn to coat and

cook until slightly browned, 2 to 3 minutes per side.

Serve topped with the strawberry salsa. Yields 4

pieces of French toast and about 1/2 cup of salsa per

serving.

The slices are usually a *slightly* smaller than " regular " bread, but

there's not THAT much difference.

That's what I was thinking too. I sent an e-mail to WW asking if there was

an error. It might take a few days to hear back from them, but I'll let

you know what they say.
