STUFFED MUSHROOMS

 

This deceptively simple recipe is a guareanteed hit at

any party. Make these ahead and bake them just before

serving.

 

1 pound fresh mushrooms

2 T olive oil

2 T minced onion

1/2 cup dry bread crumbs

1/2 tsp salt

1/4 tsp paprika

1/8 tsp pepper

 

Preheat the oven to 400°. Remove the stems from the

mushrooms caps and finely chop the stems. Saute the

chopped mushroom stems and minces onion for 5 minutes.

Add the bread crumbs, salt, paprick, and pepper and

saute for 1 to 2 minutes more. Taste and adjust

seasonings. Stuff the mushroom caps with this

mixture. Place the caps in a nonstick baking pan and

bake for 15 to 20 minutes, until caps are tender.

Serves 4
