Sauteed Artichoke Hearts with Shallots and Lemon

 

Frozen artichokes hearts are a great convenience food.

If you can't find them, substitute jarred artichokes

hearts packed in water, not oil. Rinse and drain them

well; they don't need to be boiled, you can sauté them

directly.

 

 

 

Ingredients

 

 

2 9-ounce (270-g) packages frozen artichoke hearts

1 teaspoon olive oil

2 tablespoons minced shallots

1 teaspoon minced garlic

1 - lemon, cut in half

- - Sea salt to taste

- - Freshly ground black pepper to taste

1 tablespoon chopped fresh parsley, preferably

Italian flat-leaf

 

 

Preparation - Estimated cooking time: Under 30 minutes

1 Bring a large saucepan of water to a boil. Add

artichoke hearts and, once the water returns to a

boil, cook for 5 minutes or until just tender. Drain

and set aside.

2 Heat oil in a large skillet over medium heat. Add

shallots and cook, stirring, for 1 minute. Add garlic

and cook for 30 seconds.

3 Add the drained artichoke hearts and sauté for 5

minutes. Squeeze in lemon juice. Season with salt and

pepper. Sprinkle with parsley, if desired, and serve.
