Guest guest Posted August 23, 2002 Report Share Posted August 23, 2002 Spinach Feta RiceINGREDIENTS:1 c Uncooked rice1 c Vegetable broth1 c Water1 Onion, medium1 c Mushrooms, sliced (4 oz.)2 cloves Garlic, minced1 T Lemon juice1/2 t Dried oregano leaves6 c Spinach leaves, shredded4 oz. Feta cheese, crumbled1/2 t Freshly ground black pepper1/4 c Chopped pimientoPREPARATION METHODBring rice, broth, and water to boil in medium saucepan. Stir,cover, reduce heat, and simmer 15 to 20 minutes or until rice istender and liquid is absorbed. Cook onion, mushroom, and garlic inlarge skillet coated with cooking spray until onion is tender. Stirin lemon juice and oregano. Add spinach,cheese, and pepper to rice;toss lightly until spinach is wilted. Garnish with chopped pimientoif desired.
