Veggie Rice BallsMakes: 4 servings1/4 cup lentils 1/4 cup rice 1/2 onion, chopped 1 tomato, chopped 1/4 cup chopped mushrooms 1/4 cup chopped green bell peppers 1/4 cup chopped cauliflower 1/2 teaspoon soy sauce 3 to 5 drops liquid smoke 1/2 teaspoon salt 1/4 teaspoon pepper 1/4 teaspoon paprika 1/4 teaspoon cumin 1/8 teaspoon crushed hot pepper 1/3 cup oatmeal 1/4 teaspoon garlic and herb seasoning (no salt) 1. Cook rice and lentils until soft, about 1/2 an hour.2. Meanwhile, in a large skillet sprayed with non stick cooking spray (or oil), cook onions until tender.3. Add the rest of the veggies and cook until very soft, about 20-25 minutes, adding water if needed.4. In a large bowl, combine hot rice and lentils with veggies, mash well.5. Add the rest of the ingredients and mix well.6. Form into rice balls 4 patties to make veggie burgers, and refrigerate for 1/2 an hour.7. Fry in oil, turning frequently.8. Serve warm.9.
