Guest guest Posted August 28, 2002 Report Share Posted August 28, 2002 Carrot Cake Ingredients: 1lb. carrots (grated) 2cups granulated sugar 2cups corn oil 6 eggs 3cups flour 1tsp. cloves 1tsp. ginger 1/2tsp. pimento 1/2tsp. salt 2tsps. baking powder 1tsp. baking soda 1cup nuts (walnuts preferred) 1cup mixed fruit 1cup raisins vanilla/almond flavouring to taste Directions: Preheat oven to 350 degrees F. Grease 10 inch backup pan. Mix all dry ingredients and sift. Beat eggs, add oil and fold in. Pour in baking pan and bake until done (about 1 hour.)
