Sweet Potato Pudding (Two pans)

 

Ingredients:

2lbs sweet potato (grated)

1/4lb. yam grated

1/2cup flour

1/4lb. raisins

1tsp. baking powder

1/2 tin evaporated milk

5cups coconut milk (2 coconuts)

1cup brown sugar

2tsp. vanilla

1/2tsp. nutmeg

1/2tsp. salt

1/4cup sherry

1oz. butter

 

Directions:

Preheat oven to 350 degrees F, Mix grated potato, yam,

flour, raisins and baking powder. Mix evaporated milk,

coconut, milk, sugar, vanilla, nutmeg, salt, sherry,

and butter.

 

Pour milk mixture into potato mixture and beat until

smooth. Pour into a greased 9 inch pan. Rest mixture

about 1/2 hour. bake at 350 degrees F about 1-1 1/2

hours until centre is set. Serve hot or cold.
