Peanut Butter-Banana Crispy Rice Bars

 

Kids find this recipe irresistible because it combines

three favorite flavors-peanut butter, chocolate and

banana-into one chewy treat.

 

 

 

Ingredients

 

 

- - No-stick cooking spray

1 1/2 cups (6 1/2 oz/200 g) unbleached all-purpose

flour

1/2 cup (2 1/4 oz/70 g) whole-wheat pastry flour

1/2 cup (2 oz/60 g) wheat germ

1/8 teaspoon sea salt

1 cup (1 1/4 oz/45 g) crispy brown rice cereal

2 - very ripe bananas, mashed

1/2 cup (3 1/2 oz/105 g) natural cane sugar

1/2 cup (3 1/2 oz/105 g) packed brown sugar

1/4 cup (2 oz/60 g) natural peanut butter

1/4 cup (2 oz/60 g) canola oil

1/4 cup (2 oz/60 g) fat-free egg product or 1 large

egg

2 teaspoons pure vanilla extract

3/4 cup (4 1/2 oz/135 g) semi-sweet chocolate chips

 

 

 

Preparation - Estimated cooking time: 30-60 minutes -

 

1 Preheat the oven to 350 degrees F (175 degrees C).

Spray a 9x13-inch (23x32-cm) baking pan with cooking

spray.

2 In a mixing bowl, whisk together all-purpose flour,

pastry flour, wheat germ and salt. Stir in cereal.

3 In a food processor, combine bananas, natural cane

sugar, brown sugar, peanut butter, oil, egg product or

whole egg and vanilla. Pour this mixture over the dry

ingredients and stir just to blend. Stir in chocolate

chips.

4 Spread the batter in the prepared pan. Bake until

set and a toothpick inserted in the center comes out

clean, about 25 minutes.
