Guest guest Posted August 30, 2002 Report Share Posted August 30, 2002 Berry Bundles Ingredients - - Canola oil or butter flavor cooking spray 2 1/2 cups (12 oz/360 g) mixed fresh berries-blueberries, raspberries, blackberries and/or sliced strawberries 2 tablespoons natural cane sugar 1 teaspoon cornstarch 1 teaspoon grated lemon zest 1/2 teaspoon fresh lemon juice 5 - sheets phyllo dough, thawed if frozen Preparation - Estimated cooking time: 30-60 minutes - 1 Preheat the oven to 375 degrees F (190 degrees C). Line a baking sheet with parchment paper. Cut six 9-inch pieces of string and lay them on the parchment paper. Spray strings and paper with cooking spray. 2 In a bowl, toss berries, 1 tablespoon of the sugar, cornstarch, lemon zest and juice. 3 Unfold phyllo dough, remove 1 sheet; cover the remaining dough with plastic wrap. Spray the phyllo sheet with cooking spray and sprinkle with 1/2 teaspoon of the remaining sugar. One by one stack the remaining 4 sheets phyllo on top, sprinkling with sugar between each layer. Using a long, sharp knife and a ruler as a guide, cut the layered sheets lengthwise in half and crosswise into thirds to make 6 approximately 5 1/2-inch (14-cm) squares. 4 Divide the berry mixture evenly among the squares, spooning it into the center of each. Gather the corners and tie loosely with the sprayed string. Place the bundles on the prepared baking sheet and spray with cooking spray. 5 Bake for 12 minutes, until golden brown. Snip strings immediately and gently remove. Serve warm.
