Guest guest Posted August 30, 2002 Report Share Posted August 30, 2002 Red Potato And Dill Sour Cream Potato Salad6 cups peeled, diced, cooked red potatoes1/3-cup vinegar or lemon juice1/3 cup chopped green onions1/4 cup melted butter1 tablespoon chopped fresh dill, or to taste1-teaspoon sugar1 1/2 cup sliced celery1 1/4 cups sour cream3/4 cup chopped orange or red pepperCombine potatoes, vinegar or lemon juice, onions, melted butter, dill,and sugar; toss well. Microwave at high (100%) for 2 minutes or untilwarm. Cover and let stand 1 hour to blend flavors. Just beforeserving, stir in celery, sour cream, and chopped pepper. Add salt andpepper to taste.
